I'm from out of state (i.e. New Jersey)

How hot will Texas be in the middle of the summer?

Very Hot. No A/C. You will melt. Absolute chaos. Total Anarchy. In all seriousness, Texas in July will most likely be over 100 degrees (not humid). However, Texans have adapted and 99.99% of buildings here have air conditioning including the wedding chapel and reception area. The ceremony/reception will also be at night when things cool off to the upper 80s. I (Matt) would recommend drinking plenty of water and pack as if you are going to Florida.

Will I need to bring my passport to enter Texas?

Texas is a not its own country (despite pop-culture and social media) and was the 28th state to join the US. Passports are not necessary.

Does everyone walk around with boots, hats, and belt buckles?

I (Matt) thought this when I first moved to Texas. I quickly realized Texas is a normal place just like New Jersey. Don't panic if you see someone wearing boots. This is commonplace. Hats and big belt buckles are not as common, but more confident folks will wear them in public.

I am currently in Texas. Why are people smiling at me? Out of nowhere people have started talking to me. What gives?

This is quite normal. Unlike the culture in the northeast people in Texas are more outgoing and friendly by nature. If a Texan approaches you, do not be alarmed. Reciprocate the smile/greeting and if necessary, engage in conversation. The important thing is to remain calm.

Will I need to know how to ride a horse?

No, but you will need to know how to drive a pick up truck. Guaranteed you will see more of these in a single day than your entire life elsewhere.
